Tilapia Soft Tacos with Guacamole
This recipe is from my friend and colleague, Chef Richard Ruben. He and I worked on a low fat video cooking series many years ago. No-one can do low-fat, healthy and delicious food like Richard. My family loves this simple and tasty dinner. Enjoy
Serves 4 (2 tacos per person)
1 red onion, sliced thinly into 1/2 moon-shape slices
2 tsp ground cumin
1 tsp salt
1/4 tsp freshly ground pepper
11/2 pounds tilapia fillets
1/2 cup chopped cilantro
1 jalapeno, minced (seeds discarded to lower the heat)
3 plum tomatoes, seeds discarded, then diced
8 six-inch tortillas
2 cups shredded Romaine lettuce
To assemble the taco, place some shredded lettuce on half of the tortilla and then add tilapia mixture, 2 -Tbsp guacamole and gently fold the tortilla in half.
Guacamole is so easy to make, there is no need to buy it pre-prepared except when you don't have any ripe avocados.
1 lemon, juiced
Salt to taste
Cut, pit and take flesh out of avocado skin. Mash avocado with fork. Add fresh lemon juice and salt to taste.
