Broccoli Pesto Penne Pasta
So many people have given up pasta needlessly. There is a new line of bean pastas that are high in protein and fiber. Add your vegetables, lean protein and voila, you have an incredibly healthy, delicious dinner. On this meal, we used Tolerant's Red Lentil Penne Pasta.
Red Lentil or bean pasta 2 cup dry pasta
Broccoli, steamed 4 cups
Black Olives, sliced, 1 can
Cherry Tomatoes, sliced 1 cups
Chicken breasts, cooked and cut into chunks, 9-12 oz
Pesto, 1/4 cup
Cook the pasta as directed. Steam the broccoli. When the pasta is done, drain but reserve about 1/4 cup of the pasta water separately. Put the cooked pasta back in the pot, add pesto and pasta water and mix together. Add cooked broccoli, cherry tomatoes, black olives and cooked chicken. Mix together and serve.
