Shaved Asparagus Salad with Oranges and Goat Cheese
This is a fresh, light and tasty salad that welcomes spring vegetables such as asparagus. And while the "shaving" of the asparagus takes some time, the effect is light and refreshing.
1 bunch asparagus spears
2 large navel oranges, peeled and segmented
2 ounces goat cheese
2 Tbsp fresh parsley, chopped
1 Tbsp olive oil
splash of lemon juice (juice of 1/2 lemon)
Freshly cracked pepper
salt to taste
